Butternut Squash & Sweet Potato Soup
Ingredients
500g Sweet Potatoes – peeled and diced
1 Butternut Squash – peeled, deseeded and diced
1 Tbsp Clear Honey
1 Tbsp Olive Oil
2 Onions – roughly chopped
3 Cloves Garlic – crushed
1L Chicken Stock
1 Tsp Cinnamon
1 Tsp Grated Nutmeg
100ml Thickened Cream
Method
- Preheat oven to 220C. Place the sweet potato and butternut squash pieces on a baking tray. Drizzle honey and olive oil over sweet potato and squash. Roast for 40-45 mins until soft – aim for caramelised edges.
- Fry the onions in 1 Tbsp of olive oil until soft. Add garlic, chicken stock, cinnamon and nutmeg. Bring all ingredients to the boil and simmer for 5 minutes.
- Remove the sweet potatoes and butternut squash from the oven and add to the pan with the simmering stock. Blend everything until smooth using a stick blender. Next, stir in cream and bring soup back to a gentle simmer.
- Season with a pinch of Salt & Pepper and serve.
Soup is best served with crusty toast, a splatter of fresh lemon juice, love and laughter!
