Yumi's Chocolate Custard Cupcakes Are To Die For!

We can't resist a quick and easy cupcake recipe.

So when we heard of Yumi's tried and tested method, we had to give it a try!

"Got a school fete you have to cook for? People coming over? Kids' birthday party?" Yumi began the post.

"This is a recipe from baking legend Dan Lepard. He is an Aussie, now based in London and his book 'SHORT AND SWEET' is a constant inspiration!

"The ingredients are many, but all items tend to be cupboard basics, and putting it together is not as complicated as it seems. Making the custard is just an easy way of getting the chocolate melted."

CHOCOLATE CUSTARD CUPCAKES

INGREDIENTS
50g cornflour
3tbs cocoa
100g brown sugar
225mL water
75g butter, cut into small pieces
125g good quality dark chocolate
75ml flavourless oil like sunflower
2tsp vanilla paste
2 eggs
125g caster sugar
125g plain flour
2.5 tsp baking powder

METHOD
Pre-heat the oven to 160 degrees, fan forced.
Put cornflour, cocoa, brown sugar and water into a small saucepan, get it to boiling while whisking constantly until a delightful, thick custard forms.
Remove from heat and add the chocolate and butter, stirring until incorporated.
Add the oil, vanilla, caster sugar and eggs, beating until smooth and thick.
Sift the flour and baking powder directly into the custard and beat until combined.
Spoon into paper cupcake cases set inside a muffin tray and bake for 25 minutes.

YUMI'S CONDENSED MILK ICING
1 tin (300g ish) condensed milk
150g butter, sofened
1 cup icing sugar

COMBINE everything in a mixer then spread over cupcakes! Add food colouring if feeling particularly naughty.
